The cold beetroot soup, or pink soup, is a traditional dish from Lithuania.

 

Sounds weird? Totally! But you have to trust me, this is the best food option on a hot day. The recipe is also very easy, so please don’t judge, just try this at home!

 

Recipe

 

Marinated beetroot- 500g

Eggs- 3 units

Cucumber- 200g

Dill- 20g

Spring (green) onions- 30g

Kefir- 1l

Salt- 1 pinch

 

Process

 

1. Hard boiled eggs, cool and peeled cut into pieces.

2. Cucumber cut into small pieces symmetrical. Chop the dill and spring onions.

3. Drain the liquid from the beetroots and put them into a large bowl. Add the chopped cucumbers and spring onions, add on the top kefir and salt to taste.

4. To the cooled with potatoes.

5. With potatoes aside.
